Spanish Tapas Manchego, Membrillo and Chorizo Toasties
This is SUCH a great recipe! I found it in a supermarket recipe leaflet, and I have made these tasty little toasted sandwiches regularly since then. They are GREAT for Tapas style appetisers or, serve them for a light lunch or snack. Try to use a high quality chorizo that contains real Spanish smoked paprika. […]
Cebollas En Adobo - Sweet & Sour Onions Tapas
These onions are cooked and marinated in a tasty, slightly sweet sauce. They go well with any sauceless tapa. We make this a lot for dinner parties and it’s always a hit. I use a bag of frozen pearl onions and it turns out wonderfully! Goes well with grilled chicken. We usually eat […]

Pistachio-Crusted Rack of Lamb With Pancetta
A Ferran Adria recipe from Food & Wine 2005. The rack of lamb is coated with a pistachio paste and then wrapped in pancetta to keep it moist as it roasts. The pistachio paste can be made ahead of time. — posted by xtine
Egg and Potato Chip Tortilla
This is Ferran Adria’s recipe, and it is a Spanish tortilla, which is a type of potato cake as opposed to a New World tortilla, which is, of course, a thin, flat corn or wheat flour item which you fill with other ingredients. Please use very thin chips such as Lay’s in this recipe for […]
Tostada Con Tomate

To accompany it I drank a café cortado, or coffee with very little milk, and freshly squeezed orange juice — a fairly typical combination. Tostada con tomate […]
Calamares a La Plancha
This dish of small, whole squids is a classic tapa from Andalucia (southern Spain). You could substitute squid rings or even small, white fish that have been butterflied. Although it’s usually cooked on a hot, flat griddle (plancha), this recipe uses a frying pan. — posted by Artichoke gal

Polenta Crackers
I love these crackers. They’re nutty, flavorful, and are a perfect accompaniment to dips and spreads. Also, by simply changing the spices, you can make these to suit your tastes. I really enjoy Mrs. Dashes no salt seasoning blends. — posted by Thedeath458
